RecipeDetail Preparation Time: 10 minutes Total time: 35 minutes 4 Servings Ingredients: 1 tablespoon olive oil, 1/2 medium onion, chopped, 2 teaspoons chopped garlic, 1-1/2 teaspoons ground cumin, 1 teaspoon ground coriander, 1 teaspoon red curry paste, 1 cup red lentils, 1 box (26 oz.) DOLE® Garden Soup Carrot Ginger, 1 cup lite coconut milk, 1 pkg. (6 oz.) DOLE Baby Spinach, 4 cups cooked brown rice, 2 tablespoons fresh cilantro (optional), Instructions: Step 1: Heat olive oil in large sauté pan over medium heat.  Add chopped onion and sauté 4 to 5 minutes, or until soft.  Add garlic, cumin, coriander, and curry paste and sauté for 1 more minute. Step 2: Add lentils, coconut milk, and soup, bring to a boil, then reduce heat and simmer for 15 minutes. Step 3: Add spinach to lentils and continue to simmer until lentils are tender and spinach wilted. Step 4: Divide warm rice between individual plates, top with lentil stew and garnish with chopped cilantro.

1/2  medium onion, chopped
2 teaspoons chopped garlic
1-1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon red curry paste
1 cup red lentils
1 box (26 oz.) DOLE® Garden Soup Carrot Ginger
1 cup lite coconut milk
1 pkg. (6 oz.) DOLE Baby Spinach
4 cups cooked brown rice
2 tablespoons fresh cilantro (optional)

Steps

STEP1
Ingredients

1 tablespoon olive oil
1/2 medium onion, chopped
2 teaspoons chopped garlic
1-1/2 teaspoons ground cumin
1 teaspoon coriander

Direction
